Sea spray, cliffs, native trees and bees. A rich natural environment. A little community of big dreamers. Fishermen, farmers, scientists, surfers and beekeepers… together, creating by the sea here in Leigh.
Our philosophy is in tune with the seasons. Our honey is a reflection of the climate, the terroir, the trees and the bees.
Every year, a new alchemy. The bees are teaching us what they have mastered over millions of years… HONEY.
Honey by the Sea is single origin honey, harvested from the native coastal forests of mānuka, kānuka, pōhutukawa, flax and tī kōuka. And now, we’re introducing…
The world’s first-ever cold Mānuka-smoked honeycomb, made by seaside bees in Leigh!
Smoked Honeycomb
Smoked Honeycomb
Nature provides, we rediscover.
Imagine wild honey bees, 30 million years ago, nesting in the tops of trees, facing a wildfire nearby.
Picture the fire burning at the bases of trees, some surviving.
Can you taste the smokiness of those honeycombs?
This flavour is that old.
Come and experience what nature has created and we’ve nurtured.
The world’s first smoked honeycomb (made by human beings).
Our Produce
Creamed Honey
Creamed Honey
Our Creamed honey is 100 % pure honey, no extra elements added. Creaming is a physical process, not a chemical one. The creamy texture relies on a controlled crystallization, which is a natural process in honey. Raw honey left in a jar crystallizes. When we “cream” honey we try to ensure the honey forms small crystals. The gentle stir creates a honey with very small crystals that interlock each other creating a smooth, thick and silky texture with a balanced palate. Ideal to spread in your toast.
Raw Honey
Raw Honey
This honey is 100% as it came from the hive but filtered enough to remove most of the wax and bee bits. All the natural goodness is preserved. Raw honey is liquid when extracted but may become semi solid through a natural process called crystallization. Different nectar sources, different crystals, different experience…a whole universe, season by season. Far from being wrong, crystallization preserves the flavors and aromas over time, maturing the honey like a good wine.
